The polish should be applied a little more virorously than just wiping on/off, especially depending on if it's abrasive or chemical in nature.
If you're using a one-step, you would be likely better off rubbing with a little pressure (not so hard as to push your car over, mind you), but enough to help get rid of the surface imperfections that the product you choose is capable of.
If you use a polish first, then the wax, the polish could be applied with a buffer, so as to save your arms. I usually wipe off the residue by hand, but there are bonnets that are meant to be used to remove polish/wax. The waxes I use are pretty easy to apply and remove, so I do this step usually all by hand (especially if it's a paste).
