Yeah this is true and it will cause your car to dry before you get a chance to wipe dry leaving water spots..

That is the biggest problem with the wind is it drys the car to fast. I happen to live in a city where the name of the city itself stands for West Wind so I can say washing in the wind sucks. I actually have my son or daughter keep hosing the vehicles down on those really windy days that i have to wash such as day before car shows and such.

Since you feel comfortable with the washing process I would like to suggest you step up to the PC Kit. Such as the ones Auotgeek sells. I believe they have a Wolfgang kit. I would also suggest you step up to Clay and make that your first step after the wash.

The NXT was the liquid. Mostly because it is so easy to use.
It is easily applied and removed by hand.

Meguiar's #80 Speed Glaze is a mildly abrasive polish.
Meguiar's says it can be used by hand, but I wouldn't even attempt it.

The suggestion for the PC kit is not a bad thing, but it's a big step from washing and waxing your car to polishing it with a random orbital polisher. It isn't difficult or dangerous, but it does require more time and effort.

Since you have the washing thing in hand, and want to try something from the DC Store, Poor Boy's PwC, Polish with Carnauba, is an excellent one step product that is also very easy to use.

Take some time before you buy too much stuff. It's awfully easy to get caught up in the buying products thing and you can end up with a bunch of stuff you never use.

That is probabaly the more logical step. I still say get some Clay. Most of the Sponsors sell a clay kit of some sort. The Poorboys comes to mind as being a very nice one.
