I'd definitely tip him. Here are some expectations, and by no means am I meaning to offend you. If he puts a buffer to it (random, PC, or rotary), the finish is not going to come out perfect; not at $100 at least. You color demands A LOT, and 1 polishing step isn't going to cut it. Granted, he might be going all out on it, but a full detail to one person means something different to another, catch my drift?
Shampooing the carpets will remove MOST stains, but not all, and this all depends on the method and products they use (by hand, steam, extractor, etc.).
You are getting a good deal by all means, especially with the chip fill in because that takes time. I just don't want you to get your hopes all up and everything of being perfect. The shine of the car even with a mild polish will turn out brighter and deeper than the Prom picture you have on there. If he is a decent detailer, a good bit of the swirls will be removed too.
If you are able to talk to him, see what his process is on the car and what products he will be using on his last day. By the way, at $100, I'd tip him right if he does the job well!
