how do you know if you've removed the clearcoat?

NHBFAN is correct. Take a clean white cotton cloth, put some cleaner or cleaner-wax on it and rub your paint. If the cloth turns the color of the paint then there is no clearcoat on that spot.

What makes you think you have cut through the clearcoat? What car and what color? What product do you think might have cut through?

If you break the clear, you will most likely be able to see the spot where the clear is gone. It will appear different that the cleared areas.

Not necessarily, it could also just mean your car isn't clearcoated.
