PB's Natural Look is fairly matte ... and you can cut it with water if you want too. It's my go-to dressing for dashboards because I also don't like shiny.
Disappointed with 303. Any suggestions?

I also had similar impressions of 303. My favorite is Meguiar's Quik Interior Detailer. It is not the least bit slick and leaves a non-shiny new look.
I use Sonus Cockpit Detailer. Cleans things up, doesn't add shine and gives some UV protection. It doesn't last very long but I apply it every other week so it is fine.
I also liked the Mequiars Cockpit Detailer but I don't think it offers any protection and seems more a cleaner-like product. The reason I say this is I can use it on glass and it doesn't leave any residue. The Sonus will leave a film. I also like using the Mequiars around the house on removing dust from home electronics.
