Generally, yeah you can *IME* (that *IME* is a disclaimer, so be careful).
Steel is harder than aluminum. I've tried to remove scratches from the Jag's stainless steel windshield surround with aluminum polish, and it didn't fix it. Cleaned it up nice though. I've had the same experience on stainless exhausts.
When my builder used a PC to polish scratches out of a stainless steel vanity top (garage bathroom) he used some *really* abrasive stuff that woulda chewed up aluminum something awful.
But I wouldn't assume that just because nothing terrible happened for *me* that you're absolutely safe, so try an inconspicuous area first.
