What products to degrease/clean

What products do ya'll like to use to clean the engine?
How dirty is the engine?

Some really dirty engines probably need a serious degreaser like the Gunk engine cleaner stuff. It might even be wirth going to the DIY spray wash.

For regular maintenance of our vehicles, I just wash the engine compartment with my car shampoo and an old wash mitt.
I have just recently tried a product called Roll-Off that seemed to do a good job on a moderately dirty engine compartment. I was impressed enough that I bought a couple gallons of the stuff.

Second the gunk if it is really bad. The very first time I cleaned my engine was with gunk and it was pretty dirty and the Gunk Degreaser works pretty well. If it isn't in too bad of a shape you could get away with some APC diluted 10:1 or something like that. After the initial cleaning, just use a water based dressing to dress it up. From what I have used and heard of other dressings tend to attract dirt more often than water based dressing so maintenance will be much easier.

I've cleaned pretty dirty engine bays with ONR/DP4-n-1 mixed for QD usage. I've also cleaned a a D-I-Y wash bay, and cleaned with APC dilutions from 10:1 to 1:1. All have worked, so I like any of them. I like what works :D

The Roll-Off product sounds promising, but I have no first hand experience. handles some large scale jobs using PB's APC, his success was enough for me to try that option. I haven't been disappointed.
