leather seating surfaces

A friend wants to buy a car that says it has leather seating surfaces.

Does this mean the seat is not all leather?

Nope. The sides and the backs are probably fake. I'd say the majority of cars call into this category.

Depending on the make of the car, these leatherettes can actually be of very high quality with excellent durability, looks, and comfort that rivals the leather that they match. MB Tex is a good example of this.

which one would you prefer though?

Good question... My ego or something says I'd prefer all leather, but ask me again in 5 years when the leather has worn a bit. I've seen cars with MB tex where the upholstery still looks good after 20 years, but I haven't seen that with leather. Maybe if you take proper care of leather it will last that long, I don't really know.
